| 摘要 | 이 글은 다도명상의 현대적 응용의 대표적 사례로 諸行無常의 관점에서 커피다도명상에 대하여 살펴본 논문이다. 다도와 마찬가지로 커피다도 역시 열매를 수확하여 건조, 볶는 등의 제조 과정과 물을 끊이고 마시는 그 전체의 과정은 자신의 심신을 닦아 도에 이르는 하나의 수행 행위로서 특히 본 논문 에서는 제행무상의 명상적 관점에서 고찰한 것이다. 본 연구자가 임상실험에서 주재료로 사용한 것은 커피나무에서 열린 열 매생두를 수확하여, 열매 씨를 건조하여 생두를 볶은 원두커피이다. 커피는 밝고 연한 황갈색, 연한 황갈색, 밤색, 연한 갈색, 갈색, 진한 갈색, 흑갈색, 진한흑갈색의 색깔과 단 맛, 쓴 맛과 신 맛, 떫은 맛, 구수한 맛 등의 풍미를 가지고 있다. 커피는 5가지 맛이 조화된 기호식품으로 한 가지 또는 두 가지 이상의 원두를 섞어 물로 추출하여 음용하는 음료로서 다도에 포함되는 식 품이라 할 수 있다. 또 커피의 향 성분으로는 당류와 아미노산 또는 단백질들 사이의 마이야르(Maillard)형의 비효소적 갈색화 반응의 생성물이다. 그리고 여기서 ‘커피다도명상’은 커피를 볶고, 끓이고, 마시는 몸과 마음의 집중 즉 커피를 매개체로 하여 생활 속에서 구현되는 다도명상의 의미로 사용하였다. 커피는 인체의 유해한 성분을 해독하는 작용과 번뇌를 씻고 마음을 차분 하게 하는 카페인 등의 효능으로 심신을 함께 다스리는데 탁월한 효능이 있 다. 그리고 커피 생두는 약간의 비릿한 향만을 가지고 있는데, 우리가 흔히 떠올리는 커피의 맛과 향은 볶음(로스팅, 배전)이라는 공정을 통해 형성되는 것이다. 따라서 이러한 공정들 즉, 로스팅 단계와 분쇄과정 등에는 불교의 핵 심인 三法印의 첫 번째 諸行無常의 含意가 내재해 있다는 것을 알 수 있다. This thesis examines that All Phenomena Are Impermanent (諸行無常), which is one of the Three Universal Truths (三法印) of Buddha’s teachings, through the meditation of the coffee ceremony (가배茶道). As the main ingredient of the clinical experiment, this researcher used coffee beans which were harvested fresh from coffee trees, then dried and roasted. Roasted coffee have various colors - from bright to light yellowish brown, chestnut brown, light brown, dark brown, blackish brown to dark blackish brown. These lead to various tastes and flavors, sweet, bitter and sour, tannic, savory, etc. Coffee is a “favorite food’ that combines the five tastes mentioned and coffee can be considered a food included in the tea ceremony as one enjoys it by extracting its flavors (one type of beans or by mixing two or more types of beans) with hot water. Chemical components making up the coffee’s aroma include saccharides, amino acid and between them, compounds created by the Mailliard Reaction, a form of non-enzymatic browning. Here “The Meditation of the Coffee Ceremony” is used to signify the meditation of a tea ceremony implemented in daily life but by using coffee. The participants roast and brew coffee and drink while their body and mind concentrated on the ritual. Coffee is known to have excellent health benefits. Caffeine, for example, helps detoxify harmful toxins in the human body and calm the mind and body. While raw coffee beans have a slightly astringent flavor, the taste and aroma of coffee as we know are formed from a process called roasting. Thus, it can be concluded that the first rule of the Three Universal Truths which is “All Phenomena Are Impermanent” is inherent in the processes of the coffee ceremony such as roasting and pulverization. |
